Siren/Cigar City Barrel Aged Caribbean Chocolate Cake
The base beer was brewed as a collaboration between Cigar City and England's Siren, Carribean Chocolate Cake is to me everything a dessert beer should be, that is, not super sweet. A 7.4% stout brewed with tons of hand roasted cacao nibs, lactose and aged with cypress wood, the chocolate is a beautiful dry bakers chocolate, with a body that is helped by the addition of unfermentable lactose which gives a touch of sweetness The wood also helps with the dryness, creating a thick, creamy, chocolatey stout that is never extreme, always in balance, super complex and just delicious. They then took that beer and aged it in bourbon barrels. Yup, as amazing as it sounds.
