Our first time ever seeing this classic from old school English brewery Ridgeway. To make this English style Barleywine they use a unique technique of beginning fermentation on the beer, then "dropping" that partially fermented beer in to another batch and then do that again. The purpose is to not exhaust the yeast or expose it to stress which leads to off flavors. The result is a beautiful take on a classic English Barleywine Big, rich notes of toffee and caramel. This beer is super ageable and comes in at 10% abv.
