Another star of Kermit Lynch's lineup, another closeout from a rockstar vintage.  But vintages must get released, and previous vintages need to go, so we and then you get to take advantage of those prices.  Here's a note from Kermit Lynch: "If you’re lucky enough to taste at Domaine Guillemot, the tasting will invariably start with this white: current vintage first, then an unlabeled, dusty bottle covered in mold, freshly fetched from the depths of the cellar. The oldest one I’ve tasted was from 1975, and it was gorgeous—a toasted hazelnut nose, buttery richness on the palate, but still a lot of freshness. So you should buy enough to drink half now and forget the other half for a decade or more."  

This is White Burgundy, where Chardonnay is king.  In this win there’s a good splash of Pinot Blanc which is simply a strain of Pinot Noir  that has gone albino and lost all color. I find it gives a unique chalky texture, with which the Chardonnay blends well. Highly unique and enjoyable, it can also age like a champ.  This wine is aged in barrel for 18 months and in bottle for 6 months before release.   It is rich, pure, and long with real development in the mouth to its peach fruit. The vines here are about 55-years old.
