Siren Caribbean Chocolate Cake
This is the third batch of a beer that took the British beer scene by storm last year. Brewed as a collaboration between Cigar City and England's Siren. Carribean Chocolate Cake is to me, everything a dessert beer should be, that is, not super sweet. A 7.4% stout brewed with tons of hand roasted cacao nibs, lactose and aged with cypress wood, the chocolate is a beautiful dry bakers chocolate, with a body that is helped by the addition of unfermentable lactose which gives a touch of sweetness The wood also helps with the dryness, creating a thick, creamy, chocolatey stout that is never extreme, always in balance, super complex and just delicious.
