Allagash Hibernal Fluxus
The second release in Allagash's Hibernal Fluxus series arrives tomorrow. Released once a year, this is the counterpart to the Summer Fluxus, and is meant to be an expression of the darker beers to go with the colder weather. The recipe changes each year, and this year's version is a milk stout fermented with Saison yeast. In appearance, this beer is all stout. Its black body and brown foam are the result of a grain bill containing: 2-row malted barley, multiple roasted malts, Munich malt, and local oats from Aurora Mills and Farm. To notes of coffee and chocolate, the saison yeast adds mild tropical fruit esters and a rustic spice. The addition of rich lactose sugar is tempered by the beer’s lightly bitter finish.
