Birds Fly South Sea & Rhythm Syrah
Our continual wild lager series. We take our Noodles lager as the base and then age it with Brettanomyces in Sam, our 20bbl Foedre. Using Solera, or fractionated blending, we pull off about half of the beer and mix it with different wine elements, like Syrah must. The finished beer is then packaged and allowed to condition for several more months in classic green bottles.
